Raw desserts are ideal for anyone who loves sweets but is trying to avoid refined sugars, dairy products, unhealthful fats or gluten. This class will introduce you to the world of raw desserts and how to work with sweeteners that are more healthful for everyone. Any dessert you can make cooked--pies, tarts, crisps, ice creams, cookies, and cakes--you can make raw. Your sweetie, family and friends will never know these desserts are vegan or raw. They taste as decadent and delicious as their traditional counterparts!

You will learn:
* Easy pie crusts, tart shells and toppings that take only 10 minutes to make.
* What no-glycemic and low-glycemic sweeteners are the best options for you.
* How to make foolproof dairy-free ice cream.
* How to make a gourmet chocolate cake in 10 minutes flat.

Menu: Kiwi Lime Tart, Chocolate Hazelnut Cake with Fudge Frosting, Lemon Cranberry Cookies, Blackberry Crisp with Vanilla Ice Cream

Raw Food Basics

This 1.5 hour session will teach you what raw, vegan foods are all about and why they are important for optimal health. We will cover nutritional benefits of raw foods and give you the specific steps you can take immediately to bring these healthy foods into your diet. This class will be mostly lecture with plenty of time for question and answers. It will include a demonstration of the most important raw snack you can eat during the winter time. You will receive lots of handouts to get you started, plus you will learn how to make the very important green smoothie. Snacks will be served!

You will learn about:
*The effects of cooking on different nutrients
*Where you get your protein on the raw food diet
*The raw food groups
*How to adapt to a raw food diet
*How to make raw food preparation quick and easy

Learn the ancient art of fermentation! Fermented foods can boost your immune system, aid your digestion and increase your vitality. They are surprisingly simple to make - and not nearly as stinky as you might think. This class will introduce you to the basics of fermentation including: dairy free cheese and yogurt, plus vegetables such as sauerkraut and carrot spears. You will also learn to make fun drinks such as kombucha and vegan kefir.

The class includes breakfast, lunch, many samples and plenty of handouts.

In this Intensive you will learn:

* What are probiotics and healthy bacteria
* How to make a healthy soda
* How to dice, mince, chiffonade and use knives with skill.
* How to roll your own "sushi"
* How to make dairy free nut and seed cheeses

Sprouts are a nutritional powerhouse, and for just a few bucks, you can grow your own! Many are intimidated by this side of raw food, but it is truly one of the easiest ways to incorporate one of the healthiest foods into your daily meals. Studies show that soaking and sprouting increases the bio-availability of your food and makes digestion easier. Grab a handful for a snack, or add it to your salad or smoothies for a huge boost of vitamins and protein.This class will equip you with all the basic information you need to begin sprouting as soon as you go home.

Bring a small glass jar with a lid. You will go home with your own baby sprouts.

In Sprouting Basics you will learn:

* How to grow sprouts using just a jar and water.
* How to store and maintain your sprouts so they will stay fresher, longer.
* How to turn sprouts into crunchy snacks for on-the-go energy.

Learn the ancient art of dehydration. In this class you will learn about equipment and tools, dehydration methods for fruits and vegetables & uses for dehydrated foods. We will then go beyond the basics of simple dehydrating and learn fantastic recipes for leathers, chips, crackers, cookies & bruschettas. Say good-bye to gluten, additives, fillers and refined sugars and hello to foods from the garden that are packed with antioxidants, vitamins, minerals and the "good" fats, to protect you from disease all year long - even when items aren't in season. This class is raw, vegan and gluten free.

But the typical sandwich is high in carbs and can leave you feeling weighed down. Asian wraps, such as spring rolls and nori rolls, are the solution to energizing food on the go. Pair these wraps with other delicious entrees, sides, and dessert for an over-the-top pan-Asian feast!

In Asian Fusion you will learn:

* How to roll picture-perfect vegetarian sushi and spring rolls.
* How to use fresh, young coconuts to make homemade Thai coconut soup.
